Burrito Bowl🥙

The burrito bowl sounds fancy and time consuming but it’s exactly the opposite! Its the easiest thing you can make with all the ingredients at home. Here, the rice is boosted with colourful veggies, ketchup and appropriate seasonings and served with refried beans, sour cream, uncooked salsa and nacho chips. It is a satiating one-bowl meal completely worth the effort.
INGREDIENTS- For 5 people
For the mexican rice-
Steamed rice - 2-1/2 cups
Bell peppers- 1 yellow and 1 red chopped
Capsicum - 1 chopped
Onion - 1 big sliced
Chilly flakes - 1/2 tsp
Tomato ketchup - 2 Tbsp
Red chilly powder - 1/2 tsp
Garlic - 1 Tsp finely chopped
Salt to taste
For the refried beans-
Rajma soaked overnight and boiled- 1 cup
Tomato ketchup - 1/4 cup
Salt to taste
Red chilly powder to taste
Tomato puree- 1/2 cup
Garlic - 2 Tsp finely chopped
Chilly flakes- 1 Tsp
Garam masala - 1/2 tsp (Optional)
For the sour cream-
Hung curd - 1/2 cup
Lemon juice - 1/2 lemon
For the uncooked salsa-
Tomato - 1 big chopped finely
Onions - 1 big chopped finely
Salt to taste
Coriander leaves - 2 tbsp
Chilly flakes - 1/2 tsp
For the corn-
Corn kernels - 1/2 cup
Butter
Additional - Nacho Chips
NOTES-
Suppose you don't have bell peppers substitute it with more capsicum and onions that will also give a good flavour.
For the sour cream it is important that your curd was hung for 2-3 hours. Otherwise you wont get the creamy consistency.
Everything should be balanced. Usually in a burrito bowl people layer it in a bowl which leads to flavours overlapping each other.
I used store bought nacho chips you can make it at home also. If you don’t get nachos substitute with blue lays.
I have used garam masala in my refried beans for that extra flavour punch. For the salsa you can use a hand chopper or a masher.
Suppose you are using baked beans(tin) you dont have to add tomato puree and skip adding tomato ketchup.
PROCESS-
For the sour cream-
Take the hung curd in a bowl and whisk it. Add lemon drops and salt and whisk again until you get a creamy consistency. Keep it in the fridge.
For the uncooked salsa-
In a bowl take chopped tomatoes, onions, chilly flakes , salt and coriander leaves. Mix it all well together. Now mash it using a masher or a bowl or a spoon.
For the corn-
Boil corn kernels in water. Strain it out and saute them in some butter.
For the Mexican rice-
In a wok or kadhai add oil. When the oil is hot add garlic and chilly flakes.

Now add sliced onions. Cook them for sometime until they look a little golden.

Add other veggies and saute them. From the center add ketchup, salt and red chilly powder. Mix everything well. Now add rice and give it a good mix without breaking the rice.


For the Refried beans-
In a non-stick pan add oil, garlic and chilly flakes. After they are golden add your tomato puree, garam masala and salt. Cook it for sometime.

Now add tomato ketchup, rajma and chilly powder and cook on a medium flame for 5 mins. Add a little water and cover the pan with a lid so that your rajma is cooked evenly. Now add 2 Tbsp of water to maintain the consistency. Give it a taste and adjust the seasonings.

For Assembling the bowl-
To assemble the bowl first add rice from the corner. Now add refried beans, corn, sour cream and your salsa. To the ends of the bowl add nacho chips and serve instantly.
