Coffee Caramel Popcorn🍿

This coffee caramel popcorn is the perfect recipe for a late night snack for a movie! So the first time i had caramel popcorn in Dubai Mall and I went crazy for it. After that every-time i went to watch a movie at PVR i would always eat caramel popcorn.
INGREDIENTS-
Popcorn Kernels – 1/2 cup Butter - 1 Tsp
For Caramel Sauce/Honeycomb: Sugar – 1 cup Water – 1/3 cup Unsalted Butter – 2 Tbsp Salt – 1 Tsp Coffee powder – 1 Tsp Baking Soda / Cooking Soda – 1 tsp
NOTES-
You can always use store bought Act-II popcorn but normal butter flavoured. Pop it in a pan or cooker and just add it to the caramel sauce.
Do not stir your sugar and water mixture. And also do not burn your sugar.
You can substitute normal sugar with brown sugar and coffee powder with vanilla essence. If you dont like the bitter flavour of coffee, you can totally avoid it and instead add vanilla essence.
Be careful while making this and do not burn yourself. 😅
So if you feel its a lot of caramel (quantity wise) add it slowly slowly into the popcorn and when all is covered you can stop adding the caramel. The remaining you can use for chocolates or other items.
PROCESS-
Take a cooker and remove the whistle(seeti). Add butter to it. Add your corn kernels and mix it well.
Now cover it with a lid until they all pop. Remove the lid leave it aside. To make a caramel sauce first in a nonstick heavy bottom saucepan and add water , sugar and butter to it. Put it on heat. Do not stir it with a spoon. You can swirl the pan but do not stir otherwise the sugar might just crystallise.
Now after sometime the mixture will be frothy. When it starts turning dark now take a spoon and stir it twice.
Now add coffee powder, salt and mix it until entire coffee powder is mixed. In this step you have to be careful about the sugar. It tends to burn in this step. Now immediately add baking soda.
Now mix your popcorn to it and mix it well until all the popcorn is covered in caramel.
Now spread it out in parchment paper or greased baking tray and let it cool for about half and hour. Break them into pieces and enjoy😉
