Eggless Chocolate Walnut brownie🍪

I love brownies! Specially the brownies from theobroma in Mumbai🥰

The first time i had a brownie it was from Cafe Coffee Day. Its first outlet got open in Raipur. So whenever someone would go they would definitely get brownies for me. During this lockdown i made brownies so many times. But everytime i tried making a chocolate brownie, some or the other thing went wrong! But after countless tries i made the perfect chocolate brownie for which the recipe is below!

 

INGREDIENTS-

  1. Butter - 1/2 cup softened

  2. Icing sugar or powdered sugar - 1/2 cup

  3. All purpose flour (Maida) - 1/2 cup

  4. Cocoa powder - 2 tbsp

  5. Baking powder - 1 tsp

  6. Vanilla extract - 1 tsp

  7. Dark chocolate melted - 1/2 cup

  8. Toasted walnuts - 1/4 cup or 7-8 walnuts halves cut in pieces

  9. Milkmaid - 1/4 cup + 2 Tbsps

  10. Warm water - 1/4 cup

  11. Coffee powder - 1 Tsp (optional)

Instead of walnuts you can also use hazelnuts. I used amul dark chocolate for the brownie, you can use any other dark chocolate. You can substitute icing sugar for regular powdered sugar.
 

PROCESS-

Preheat the oven at 160 degrees C for 10 minutes.

Now in a large mixing bowl take softened butter and whisk it well. Now add powdered sugar/icing sugar to the butter and whisk again for 3-4 mins until light and fluffy.

Now add milkmaid and vanilla essence and again combine it really well. Add the melted dark chocolate to the mixture and whisk it really well.

Now take all the dry ingredients in another bowl - maida, baking powder, coffee powder and cocoa powder.


Add this dry mixture to the wet ingredients and combine them really well. Finally add the warm water to the mixture and again mix it nicely. It should be a smooth batter. Finally add the toasted and cut walnuts to the batter.

There is no need to use the cut and fold technique for the batter. You can whisk and mix them well.

Now pour this batter in any available tin and bake it for 25-30 minutes at the same 160 degree temperature or until its done.

Okay, so this brownie is not very gooey. It has a little dry and crumbly consistency. But the taste is heavenly. You can also pour caramel sauce over this for a more amazing flavour.
