Eggless cupcakes🧁
Cupcakes have always been my favourite especially blueberry cupcakes 🥰
They can also be made with so many variations and are actually very easy to bake.
I have tried to simplify the cupcake making process in this recipe. Hope this helps.
INGREDIENTS-
I used bigger cupcake liner so this quantity gave me 6 cupcakes. If you are using smaller liners or small moulds this quantity will give you around 10-12 cupcakes.
1 cup powdered sugar/ caster sugar
100gms melted butter
1 tsp vanilla essence
2 cups all purpose flour (maida)
1 cup milk
1 tbsp vinegar/apple cider vinegar
2 tbsp fresh cream
2 tsp baking powder
For variations-
Bluebbery cupcakes -
Blueberries - a handful or 15-20 fresh blueberries
Christmas cupcakes-
Orange peel - 1 tbsp
Tutti fruity - 1.5 tbsp
Dried raisins - 1 tbsp
Cherries - 4 cherries chopped
Cinnamon powder - 1/4 tsp
If you like a strong cinnamon flavour add 1/2 tsp or else 1/4 tsp is fine. Cherries are the ones which are used on top of paan and are easily available.
PROCESS-
Preheat the oven at 170 degrees C for 15 mins.
The first step is to melt your butter. Meanwhile, add vinegar to the milk and leave it aside. Do not worry if it curdles up. It is suppose to do that.
Now in a mixing bowl take the melted butter and using a whisk, beat the butter for a minute. Now add powdered sugar to the butter and beat using a whisk until it combines. Add the vanilla essence to it.
Seive the flour and baking powder. Add this in the butter and sugar mix.
Now add the curdled milk (milk and vinegar mix) to the flour mixture. Using the cut and fold technique combine the batter well. Finally add the fresh cream into the batter and make a smooth and thick batter.
The fresh cream gives a very good texture to the cupcake. You can always use malai instead of fresh cream.
Pour the batter in the cupcake liners or cupcake moulds. Make sure the mould is filled only 70-80% beacuse they rise well.
So if you fill to the top there are chances that the batter might fall off the mould while baking.
Now bake the cupcakes for 20-25 minutes at 170 degrees.
Vanilla cupcakes are ready.
VARIATIONS-
Christmas cupcakes-
Add all the ingredients- cherries, tutti fruity, cinnamon powder, orange peel and raisins.
You can add any type of dry fruit in this. Walnuts/Almonds/Cashews or any other.
Mix it all well. Now bake at the same temperature for the same time.
These cupcakes do not require frosting but you can do a plain vanilla icing on these.
Blueberry cupcakes-
Add fresh or dried or blueberry filling (compote) to the batter. And bake at the same temperature for the same amount of time.
After baking the cupacke will look like this.
To frost the cake- take whipped cream add a little red and blue colour to it. You can also add essence or little blueberry compote. Pipe it on top of the cupcake.
