Eggless fluffy pancakesđ„

Who doe love a good fluffy pancake? Wouldnât it be easier if you could just make it at home? I love pancakes specially those mini ones at 99 pancakesđ Me and my friends would just go, eat them and chill there for sometime. Check out this recipe and do make it at homeđ€©
INGREDIENTS-
All purpose flour/Maida - 2 cups
Baking powder - 1 Tbsp
Sugar - 2-3 Tbsp
Salt - a pinch
Baking soda - 1/2 tsp
Butter - 2 Tbsp melted
Milk - 1.5-2 cups
Vanilla essence - 1/2 Tsp
If you want to make a chocolate pancake add 2 tbsp cocoa powder and reduce the flour with the same quantity.
PROCESS-
The first step is to sieve the flour. Add the sieved flour in a mixing bowl. Add the salt, sugar and baking soda.
Now add the baking powder (levelled).
Now add the melted butter and milk.
Add the milk in batches. First add 1 cup then another 1/2 cup. See the consistency and then stop adding milk.
Add vanilla essence and mix everything well. The consistency should be a pouring consistency.
Suppose you want to make a chocolate chip pancake, add chocochips in the batter itself.
You can also add 2 tbsp nutella/chocolate sauce in the batter itself.
Now take a non-stick pan. Keep it on a high flame until it becomes a little hot. Now reduce the flame and pour the pancake batter into the pan.
Now cover it for 2 mins until its cooked and looks like this.
Now flip the pancake and again let it cook for 2 minutes.
If the pancake doesnât look like this, it means your pan wasnât hot enough.
Now stack the pancakes onto a plate. Pour maple syrup on top and whipped cream on the side. You can serve it with fresh fruits too like apples/bananas. Honey is also a good option with pancakes. If you dont have maple syrup use honey instead!
ADDITIONAL NOTE-
You can use a spoon and pour small amounts of batter to make cereal style pancakes.
