GRILLED/BARBECUED VEGETABLES🍢🍡

So whenever it rains or during winters me and my family would sit near the Sigri (Bonfire) and grill the vegetables from our farm. I feel you can marinate anything, grill it and enjoy the smoky flavours of it. So this time i decided to grill broccoli, corn, mushrooms, paneer, bell peppers, onions and capsicum and grill it in a single skewer so everyone can have all the varieties of vegetables. It looks beautiful and tastes damn good.


INGREDIENTS- For 6-7 people

For the marination-

  1. Coriander powder- 1 tsp

  2. Turmeric powder - 1/2 tsp

  3. Chilly powder - 1 tsp

  4. Ginger garlic Paste - 1 tsp

  5. Cumin powder (Jeera powder) - 1 tsp

  6. Chaat masala - 2 tsp

  7. Garam masala - 1/2 tsp (Optional)

  8. Black pepper powder - 1/2 tsp

  9. Kasuri Methi - 1 tsp

  10. Ajwain seeds - 1 tsp

  11. Yogurt (Curd) - 1/2 cup

  12. Besan - 1/4 cup

For the vegetables-

  1. Broccoli florets - 1 cup

  2. Onions - 2 big

  3. Bell peppers - 1 red and 1 yellow

  4. Capsicum - 1 big

  5. Corn ( boiled) - 2 Cobs

  6. Mushrooms - 1/2 cup

  7. Paneer - 200 gms


 

NOTES-

  1. This is basic marinade for all grilled tikkas or vegetables.

  2. After marinating the vegetables let it rest in the fridge for two hours. Resting infuses more flavours in it. The vegetables absorb all the marinade.

  3. You can choose any type of vegetable like cauliflowers, zucchini, beetroots, sweet potato, potatoes and pineapples. This recipe works for everything.

  4. Be careful while putting veggies on to the skewers so you dont get any cuts.

  5. You can use tandoor, oven-bake them, use a frying pan and saute them or directly use a stove.


 

PROCESS-


To prepare the marinade mix all the ingredients in a large mixing bowl.


Add yogurt and all the veggies into it. Mix it really well such that all the veggies and covered with your marinade.

Let it rest in the fridge for 1-2 hours. After that take them out and place it in skewers. Apply little oil or butter on them.

Now place it on the barbecue and cook it equally from all sides by continuously turning it.

Now take it out using a fork or tongs and serve it with chaat masala sprinkled on top and coriander chutney.

This is an extremely easy recipe with all ingredients from home. It tastes heavenly when its raining or winter days.
