Litti Chokha🍲
This recipe comes from bihar and jharkand region in India. Litti is the stuffed whole wheat dough ball filled with sattu masala and Chokha is a mashed relish that is served with litti. Chokha can be made with roasted eggplant (baingan), boiled or roasted potatoes (aloo) and roasted tomatoes (tamatar). You can make them separately or even combine all three and make one chokha.

INGREDIENTS-
SATTU LITTI-
For the dough-
Whole wheat flour (atta) - 1/4 kg or 2 cups
Malai - 125gms or 1/2 cup
Salt to taste
Turmeric powder (Haldi) - 1/4tsp
Eno - 1/2 packet
Water - 3/4 cup
For the masala filling-
Sattu (roasted channa powder) - 1/2 cup
Onions - 2 medium sized finely chopped
Green chilly, garlic and ginger paste- 1.5 tbsp (2 green chilly, 8 garlic cloves and small piece of ginger grind in the mixer)
Mango pickle masala - 1.5 tsp
Ajwain - 1/2 tsp
Coriander leaves - 2 tbsp roughly chopped
Salt , Black salt and amchoor to taste
Lemon juice - 1/2 tsp
Mustard oil (sarso) - 1/4 tsp
2. POTATO BRINJAL AND TOMATO CHOKHA
Brinjal roasted - 1/2kg
Tomatoes roasted - 1/2 kg
Potato roasted - 1/4 kg ( 250gms)
Onions roasted- 1/4kg ( 250gms)
Garlic roasted - 8-10 cloves
Garlic - 1 full finely chopped
Green chilly - 6-7 chillies finely chopped
Mustard oil (Sarso) - 3-4 tbsp
Salt to taste
3. PEPPERMINT AND RAW MANGO CHUTNEY
Mint leaves - 1/3 cup
Salt to taste
Jeera - 1/2 tsp
Raw mango - 1 small
Sugar - 1/4 tsp
Lemon juice - 1/2 tsp
PROCESS
SATTU LITTI-
For the dough-
Take flour in a container.
Add all the other ingredients and knead the dough.
Let it rest for 10 mins.
Knead the dough again and make it a little soft.
For the masala-
In a container add sattu, onions, salt, black salt, amchoor powder and coriander leaves. Mix it all.
Now add mango pickle masala and green chilly ginger garlic paste.
Finally add lemon juice and mustard oil.
Give it all the good mix and rub it between your hands or with your fingers. It should be of a dry consistency.
Take a small portion of dough and roll it.
Fill the masala in that and form a ball shape.
Roast your litti in coal or dried cow dung fire until done.
You can make your litti in tandoor or oven also.
2. POTATO BRINJAL AND TOMATO CHOKHA
Take all your veggies except chillies and roast them in wooden coal or dried cow dung fire. You can also roast it directly on the gas.
Roast them from all sides. It will look like this.
After roasting them peel off the skins like this
Mash everything using your hands and mix them all together.
In a kadhai add mustard oil. Add your green chillies and fry them until garlic is golden.
Mix the mashed vegetables and add salt.
Take a piece of burning coal in a steel bowl and put it inside the kadhai and pour some mustard oil on that to give the smoky flavour in chokha. Cover it for few minutes.
After that garnish it with coriander leaves while serving.
3. PEPPERMINT AND RAW MANGO CHUTNEY-
Grind everything except lemon juice in the mixer grinder and remove it in a bowl.
Add lemon juice.
NOTES:
It is very important to roast your veggies otherwise you wont get that roasted flavour.
You can roast your litti in oven (200 degrees for 10-15mins)
It is best served during rainy and winter season.
Mustard oil is a must use in this dish.
Sattu is easily available in the market in case if it is not available grind roasted channa in the mixer.
You can top your litti with ghee also.
