MEXICAN COFFEE BUNS/PAPPAROTI BUNS🍞🍴

Mexican Coffee Bun is a bun stuffed with butter and has a very crispy coffee pastry topping. These sweet buns with a strong coffee flavour are to die for. So finally i tried these buns at Papparoti in Mumbai and i started missing them at home. I finally made these and they came out just perfect. Try this recipe and you wont go wrong.


 

INGREDIENTS-

For the Dough- Enough to make 4 buns

  1. All purpose flour - 175gms

  2. Salt - 1/4 tsp

  3. Sugar - 1 Tbsp

  4. Instant yeast - 1/2 tsp

  5. Water - 55 ml

  6. Warm milk - 50 ml

  7. Butter - 1 Tbsp

  8. Butter cubes or 1/2 Tsp butter for each bun


For the topping-

  1. Instant coffee - 1 Tbsp

  2. Water - 1 tbsp

  3. Butter - 2 Tbsp

  4. Sugar powdered - 2 Tbsp

  5. Milk - 2 Tbsp

  6. All purpose flour - 40gms

  7. Nutella and few hazelnuts


 

NOTES-

  1. Proofing is very important otherwise your buns wont rise and be fluffy.

  2. If you are using dry active yeast add 3/4 tsp of dry yeast in warm milk with sugar and let it froth for 5 mins.

  3. Incase you dont have piping bag you can always use zip lock poly at your home.

  4. Knead the dough well after adding butter to get a higher rise of buns.

 

PROCESS-

Take a large mixing bowl and add flour, yeast, salt and sugar. Mix it all well.

Mix your milk and water. Now add it in the flour mixture to make a dough. It will be a little sticky dough. This is how it should look.


For the first proofing cover this bowl with a cling wrap and keep in a warm place for 20 mins. After the first proofing the dough looks like this. It wont rise too much but just a little bit.

Now add softened butter to the dough and mix it in the dough. It will become very slippery dough and little difficult to knead. So add very little flour and knead the dough nicely for 5 minutes till its soft.


Now its time for the second proofing. Cover it again with a cling wrap and let it rise for 1 hour. After one hour it fluffs up really nice.

Now knock out all the air from the dough and divide in 4 equal parts. Now take cold butter and stuff it in the bun. Seal from the sides by bringing them in the center. This step will help in avoiding the butter oozing out while baking.

Now place them on a baking tray and let it rest again for one hour. After one hour the buns will rise beautifully.

Preheat your oven at 170 degrees C for 10 mins and meanwhile prepare the topping.


 

For the topping-

Whisk butter in a bowl and add powdered sugar.


Mix coffee powder in water and add to the whisked butter sugar mix. At the end add milk. Mix it all well and pour it in the piping bag.

Top it by piping on the buns like shown in the video.


Bake these buns for 15 mins at 170 degrees C. Serve it by topping with nutella and hazelnuts.
