Palak Paneer 😍🧀🥬

Paneer (Indian cottage cheese) is cooked with spinach and spices in this creamy and flavorful curry.

It pairs well with naan, paratha or jeera rice. So very often me and my dad would experiment with palak paneer. We would try various recipes from internet or books or just random mix of ingredients! This recipe is our favourite and is inspired from Cooking Shooking. **This is a very simple recipe and hence no recipe notes😇

 

INGREDIENTS-

  1. Palak - 3 bunches

  2. Coriander leaves (Dhaniya) - 1 bunch

  3. Garlic - 10 cloves

  4. Onion - 1 big finely chopped

  5. Ginger - 1 inch finely grated

  6. Green chilli - 2 finely chopped

  7. Ghee - 2 Tbsp

  8. bay leaf -2

  9. Cumin seeds - 1 Tsp

  10. Tomatoes - 2 chopped finely

  11. Red chilly powder - 1/2 tsp

  12. Nutmeg - a pinch grated

  13. Paneer - 200 gms in cubes

  14. Curd - 1/2 cup

  15. Malai - 2 tbsp

  16. Ice cubes- 2

  17. Sugar - 1/2 tsp

  18. Garam masala - 1/2 tsp

  19. Turmeric powder - 1/4 tsp

  20. Coriander powder - 1 Tsp

 

PROCESS-

In a kadhai add ghee. Let the ghee melt for 1 min and let it become hot. Now add bayleaf, cumin (jeera) and let it become brown. Now add ginger, garlic and green chillies. Let them cook well. Now add grated nutmeg and chopped onions and cook them until golden brown. Finally add chopped tomatoes. Cook them well until soft.

Now the next step is to add your garam masala, turmeric powder, coriander powder, red chilly powder, chopped palak and coriander leaves. Cook them for 3-4 mins by covering it with a lid.

In a mixer grinder add half of the tomato palak mixture and grind it by adding 2 ice cubes to a smooth puree. Adding ice cubes gives a nice colour and consistency to the gravy. Now add this puree to the other half of the tomato palak mixture and cook it again for 2-3 mins. Next step is to turn off the heat and add curd and mix it well. Now turn on the heat again and add paneer cubes and salt. Mix everything well and let it cook for 2-3 mins. Add sugar and malai for a more creamy texture. Cook for 2 mins. Serve it with naan, rotis or rice.
