Paneer Tikka🍢
Paneer tikka is an Indian dish made from chunks of paneer marinated in spices and grilled in a tandoor. It is a vegetarian alternative to chicken tikka and other meat dishes. It is a popular dish that is widely available in India. This is a very common order in restaurants.
INGREDIENTS-
For the marination-
Hung curd - 1 cup
Turmeric powder - 1/2 Tsp
Red chilly powder - 1 Tsp
Besan/Gram flour - 1/4 cup
Coriander powder - 1 Tsp
Chaat masala - 1 Tsp
Kasuri methi powder - 1 Tsp
Kashmiri mirch - 1 Tsp
Garam masala - 1/2 Tsp
Chilli paste - 2 Tsp
Salt to taste
Black salt - 1/2 Tsp
Red colour a pinch (optional)
Lemon juice if not sour in taste - 1/2 lemon
For the tikka-
Paneer - 250 gms cubed
Onion petals - 2 cut
Capsicum - 2 cubes
Tomato - 2 cubes
PROCESS-
Take hung curd in a large mixing bowl/container. Using a whisk beat the curd into a smooth paste.
So if you are making paneer tikka in evening, hang the curd in the morning so that when you take it out in the evening it will really thick.
Now add all the spices. Everything is according to the taste. So after adding everything give it a taste.
All the spices are added as per the taste. You can adjust the taste. Kasuri methi powder here, is dried leaves grinded into a powder.
Chilli paste- Boil chapata mirch and grind it into a paste. Then cook in a pan with oil until very thick.
Now give the marination a taste. If it is not sour in taste add lemon juice. Finally add red colour.
Adding red colour is optional, it is just give a vibrant colour in the dish.
Now add the vegetables and paneer cubes to the marination.
You can add your choice of vegetables to the marination. You can use broccoli, corn cob, bell peppers or mushroom too.
Now refrigerate this for half and hour to two hours.
Refrigerating the marinated paneer and vegetables helps in enhancing the flavour and also they absorb the flavour.
After refrigerating, put the paneer and vegetables into skewers without hurting yourself and grill on the charcoal.
Grill it for few minutes until done. Keep turning it every few seconds so that it is grilled evenly. It will have a little black colour. While grilling add a little butter on top.
If you dont have a charcoal griller, you can use gas tandoor or directly grill on the gas. The last option is to add this entire mix into a pan and cook at a high heat like a sabji.
Take it out and serve it immediately with mint chutney.
