Pink Sauce Pasta✌️

This is one of my family favourites. I make it for them very often. Can you believe my mom started eating pasta after this recipe!

I learnt italian from Lucky’s Culinary classes. Ever since i was in Bangalore i loved eating all sorts of pasta, then i came back home and learnt making one of my own. Hope you like this recipe😇


NOTES-

  1. You can make separate pasta. With this recipe you can make white sauce , red sauce and the mix sauce pasta.

  2. You can adjust the sauces to make your pink sauce. I like it a bit dry and more flavour of cheese hence this colour.

  3. It is completely upto you how cheesy you want your white sauce. You can avoid cheese spread and cheese cube.

  4. You can top your pasta with mozzarella and cheddar cheese and bake it for 6-7 mins at 190 degrees C.


INGREDIENTS-

For white sauce-

  1. Maida - 2 Tbsp

  2. Butter - 2 Tbsp

  3. Cold milk - 2 cups

  4. Amul fresh cream - 1/4 cup

  5. Amul cheese spread - 2 tbsp

  6. Amul cheese cube - 1 cube

  7. Salt and pepper to taste

  8. Oregano - 1 tsp


For red sauce -

  1. Tomatoes - 4 medium finely chopped

  2. Onions - 2 small finely chopped

  3. Dried red chilly - 4 medium

  4. Red chilly powder - 1/2 tsp

  5. Garlic - 2 tsp finely chopped

  6. Salt to taste

  7. Oregano - 1/2 tsp

  8. Black pepper powder - 1/4tsp

  9. Olive oil - 2 tbsp

  10. Water - according to the thickness required of the sauce

For assembling the pasta-

  1. Veggies of your choice - Diced or sliced any way you like. ( i use boiled broccoli and corn, bell peppers, jalapeños and onions)

  2. Mozarella cheese - depends upon the quantity you like.

  3. Oregano

  4. Boiled pasta - I used Delmonte Durum wheat semolina pasta.(For 100gms pasta 2 cups water)

PROCESS-

1. For the red sauce-

  • Take olive oil in the pan. Add garlic and onions until nice golden and brown.

  • Add tomatoes, salt and pepper.

  • Add dried red chilly, red chilli powder and oregano.

  • Cook until tomatoes are soft and mushy.

  • Let it cool down and add 2-3 ice cubes and little water and blend it to a fine puree.


2. For the white sauce-

  • Take 2 tbsp butter in a pan and let it melt. When it melts completely add maida. Combine it well.





  • Now slowly slowly add cold milk and keep stirring it. Add salt, pepper and oregano. Keep stirring until it becomes thick.

  • Now add cream, cheese spread and cheese cube. Mix until the cheese melts.

  • If you want a less thick sauce add more milk.



3. To make the pink sauce pasta

  • In a pan add very little olive oil and pour your red sauce. Mix in all your veggies properly.




  • Now pour in your white sauce in the red sauce and combine well.

  • Add your boiled pasta and mix it slowly making sure the pasta doesn’t break.

  • Now adjust the seasonings. Your pasta is ready to be served.
