Triple Schezwan Fried Rice and Manchurian🍛

Triple rice is complete meal with combination of rice, hakka noodles and fried noodles which is served with manchurian gravy. The blend of rice and noodles with spicy notes will be definitely tickling your palate.

NOTES-

  • Rice should not be fully cooked. It should be dry for stir frying. The best way it to spread the steamed rice onto a plate for 15-20 mins.

  • Always stir fry the vegetables on a high flame and do not cook them completely and should still be crunchy.

  • I have served this fried rice with Manchurian gravy .

  • At time of boiling Hakka Noodles for this recipe, always cook for 30 seconds lesser than shown on packet. Add few drops of oil and salt in water .

  • You can also add the Chings Triple Schezwan rice masala after adding the rice onto the wok. It gives a nice flavour and colour.


INGREDIENTS- For 2-4 people

For the rice-

  1. Rice - 1/2 cup (Steamed rice)

  2. Noodles - 1/2 packet (approx. 100gms)

  3. Onions - 2 medium sliced

  4. Carrots - 1 medium chopped (small pieces)

  5. Capsicum - 1 big chopped (small pieces)

  6. Salt to taste

  7. Black pepper to taste

  8. Schezwan sauce - 3-4 tbsp

  9. Red chilly sauce - 1 tsp

  10. Soya sauce - 1/2 tsp

  11. Tomato ketchup - 1 tsp

  12. Oil - 2 tbsp

  13. Garlic - 1 tbsp finely chopped

  14. Ginger and green chilly- 1 tsp finely chopped

  15. Fried noodles (optional)


For the gravy-

  1. Garlic, Ginger and green chillies- finely chopped

  2. Onions - 1 finely chopped

  3. Veggies- finely chopped (optional)

  4. Water - 2 cups

  5. Cornflour slurry- 1/2 cup water and 2 tbsp cornflour

  6. Soya sauce -1/2 tbsp

  7. Red chilly sauce - 1 tbsp

  8. Tomato ketchup - 1 tbsp

  9. Salt and black pepper to taste


For the balls-

  1. Cauliflower- 1 finely grated in smallest hole

  2. Carrots - 2 small finely grated in the smallest hole

  3. Salt and black pepper to taste

  4. Maida - 3-4 tbsp or more to get the right consistency

  5. Cornflour - 1 tbsp


PROCESS-

  • Take oil in a wok and add garlic, ginger and green chillies. Fry them until the garlic is golden.


  • Now add onions and fry them for some while. Do not cook it completely. Add other veggies and saute them well till carrots are a bit soft.



  • Now add the sauces and combine well. Add salt and pepper.

  • Now add your steamed rice and noodles and mix well.


  • Now taste and adjust all the sauces and salt.

  • While serving top it with fried noodles and serve with manchurian.

For the manchurian gravy-

  • Add oil in a wok and add ginger, garlic and green chilly.

  • Now add onions and fry for sometime.

  • Add all the sauces in between the wok and mix it nicely.

  • After that add water and let it simmer.


  • While simmering prepare your cornstarch slurry and mix in the gravy.

  • Simmer for 5-10 mins until the gravy becomes thick.

  • Finally add salt and pepper.


For the manchurian balls-

  • Grate your cauliflower and carrots well or use a hand chopper for it.

  • Now add salt and black pepper.

  • Now add maida in it and mix well. It will a doughy consistency meaning you can easily shape it any way you want.


  • Now make round balls and deep fry them until nice in colour.


Enjoy this on a rainy day or during winters to feel the spice. Very easy to make yet very delicious 😋
