Veg Manchow soup🍜

Manchow soup has been my favourite! Everytime we would go to a restaurant i would always order manchow soup because you get the crispy fried noodles with it and i loved them. When i grew up i would still order this because of the hot and spicy taste it has🥰

 

INGREDIENTS-

For 4 servings-


VEGETABLES-

  1. Ginger - 1 inch finely chopped

  2. Garlic - 4 cloves finely chopped

  3. Green chilly - 2 finely chopped

  4. Cabbage - 1/2 cup shredded or finely chopped

  5. French beans - 6 beans finely chopped

  6. Coriander stem - 1.5 tbsp finely chopped

  7. Capsicum - 1/2 finely chopped

  8. Carrot - 1 small finely chopped

  9. Onions - 1-2 onions finely chopped

  10. Mushrooms - 2-3 Tbsp (optional)


SAUCES and SPICES

  1. Red chilly sauce - 1 Tbsp

  2. Soya sauce - 2 Tbsp

  3. Vinegar - 1.5 Tbsp

  4. Black pepper powder - 1/2 Tsp

  5. Salt to taste

  6. Vegetable stock - 5 cups


FRIED NOODLES-

  1. Hakka noodles - 100gms

  2. Oil for frying

  3. Cornflour - 1 tsp


CORNFLOUR SLURRY-

  1. Cornflour - 2 Tsp

  2. Water - 1/2 cup


 

Vegetable stock-

Take 5 cups of water and on the lowest flame keep it for boiling. Now in that add 4 cloves of garlic. Add the leftover vegetables you have in your house like the leftover cabbage stem, carrot tops, coriander stems or mushroom ends. Keep it simmering while you prepare the rest of the things.


Frying the noodles-

Put oil on heat for frying the noodles.

Boil 100gms noodles in water and little oil. After you have boiled them 80% wash them in cold water and rub a little oil on them. Now sprinkle cornflour on the noodles.

After that in hot oil toss the noodles as shown in the video.

Let it sit for few minutes until the bubbles disappear. Now turn the noodles using a tong and flip it. Cook it from both sides and take it out on a tissue paper.

Now take a wok/kadhai and heat 2 tbsp oil in it. Sauté the ginger, garlic and green chilly.

After that sauté onions until they shrink and turn golden brown.

The important part comes here. Mix all the remaining chopped vegetables(cabbage, carrots, beans and capsicum) except mushrooms and reserve 4 tbsp of these in another bowl.

Now add the vegetables and stir fry them without overcooking. Add your chopped mushrooms in this. Now add the salt.

Add the prepared vegetable stock in the wok and let it simmer. After that we will add soya sauce, red chilly sauce, black pepper powder and the vinegar.

Now bring it to boil.

We always add the cornflour slurry after the gravy has come to a good boil. This avoids the cornflour sticking at the bottom.

After it has come to a boil add the cornflour slurry. *Ignore the quantities show in the videos.


Stir and boil until the soup thickens and turns a little glossy. Finally add the coriander/spring onions and give a good mix.


While serving, add 1tbsp of raw vegetables which we had reserved into the soup bowls with fried noodles at the side.

Adding raw vegetables give a unique flavour to the soup. You get them crunchy as well as soft in each bite just like you get in restaurants.
